Stone ground from locally grown NON GMO corn. Unbolted cornmeal is unsifted, with a "gritty" texture. Sometimes referred to as "old fashioned" cornmeal.
The yellow has more taste than the white, but is harder to find locally in retail stores, so I bought it directly from the mill. Delivered quickly, but shipping is steep for to 2 five pound bags. Shipping doubled the cost of the cornmeal. Great taste though and worth it

The corn meal is like what my Mother used to bake cornbread when I grew up.
Made my first batch yesterday and it came out excellent.
