I bought a bag of this flour during the COVID quarantine when flour and yeast couldn't be found at the grocery, and I made sourdough rolls from this and my own starter created from some dried dates I had. I had never used unbleached flour before. I haven't changed back. I think it makes better rolls (of any kind) than all-purpose flour and I like to enjoy it. I buy the big bag (cheaper per pound) and freeze most of it till needed. I only do dinner and cinnamon rolls (from my mom's recipe), but I suspect it is just as good with loaves of bread.
